Our favourite Summer Salad Dressings

We find that it's the dressing that can really make or break the salad so here are our 3 favourites for summer to escalate your healthy meals:
Sweet - Citrus Tahini Dressing from Angel's Belly (we love this with a kale salad)
Makes 160ml (Serves 2)
3 – 5 tbsp (½ orange) fresh orange juice
1 tbsp fresh lemon juice
2 tbsp tahini
1 tbsp Apple Cider Vinegar
2.5 tbsp maple syrup
2 tsp Dijon mustard
1 tsp fresh ginger, roughly chopped
1 very small clove garlic (optional)
½ tsp Himalayan salt
1 tbsp olive oil (optional)
Black pepper
(Blend all ingredients)
Rocket Pesto from Hemsley and Hemsley (perfect with a spiralised courgette salad)
1 large bag of rocket, approximately 120g
1 large clove of garlic
25 whole almonds (soaked overnight in filtered water with a pinch of sea salt, rinsed and drained) or try 12 brazil nuts
1 tablespoon of fresh lemon juice
1 teaspoon of balsamic vinegar
6 tablespoons of extra virgin olive oil
1 pinch of sea salt, or to taste
Black pepper to taste - rocket is quite peppery
70g chopped/grated parmesan. or even goats' cheese (can be left out if dairy free)
(Blend all ingredients)
Optional: ½ teaspoon raw honey, as rocket can be a little bitter
Passon Fruit Dressing from Jamie Oliver (with his Sweetheart Cabbage Slaw is lovely)
1 large orange
3 ripe passionfruit , plus extra to serve
2 tablespoons cold-pressed extra virgin olive oil
1 tablespoon poppy seeds
(Mix all ingredients)
