Radiance Recipe: Hearty Lentil Soup

by Clare Ward,

As the weather gets colder we naturally reach for more hearty dishes to help heat us from the inside. Nothing does this quite like a great homemade soup. We asked our Executive Nutritional Therapist, Midi Fairgrieve, for one of her favourites and below is a recipe that she created herself. It couldn't be simpler.

Warming Winter Soup

1 tablespoon coconut oil

1 cup of brown lentils (soak these for 1-2 hours before using).

1 large onion

3 cloves garlic

2 large carrots

1 pint stock / water

6 prunes

1 tablespoon tomato puree

1 teaspoon turmeric

3 teaspoons apple cider vinegar

Salt and pepper to season

To make:

Soften the chopped onions and garlic in the coconut oil. When starting to brown, add the rest of the ingredients and bring to the boil. Turn down the heat and simmer for an hour. Blend and enjoy!

With Winter looming we are thinking about boosting our immune systems. A daily organic fresh juice does this brilliantly (try carrot, beetroot, kale, apple and ginger at home), but there are many other excellent natural plant products that can give added support. Right now we are loving two fantastic products from Comvita:

Radiance Loves...Primrose Kitchen Muesli

by Clare Ward, , link

Both Christina and I love raw food and I have been meaning to try the Primrose Kitchen muesli for a while. I am a huge ginger fan so when I saw their Raw Beetroot and Ginger Muesli in Wholefoods this week I knew I had to try it. I wasn't disappointed. When it says it has ginger it really means it, and the same goes for the beetroot. The ginger creates a fiery taste and gives a proper kickstart to the day, whilst the beetroot gives it an earthy sweetness. I had it with almond milk (which turned pink!) and it was delicious! If beetroot and ginger aren't your thing then they also have a Carrot, Apple and Cinnamon Muesli - I will definitely be trying this soon.  So for a fast, easy and nutritious start to your day this is a great option. Available online from www.primroseskitchen.com and various retail stockists.
